LEVANDE ARKIVET / LIVING ARCHIVE PROJECT

A collection of sourdough starters and the stories behind them.

For each starter its story and a recipe is collected, along with the owners reflection on how much their starter is worth in either monetary or emotional value. Once collected, the starter is dried which keeps the sourdough lactobacilli bacteria at rest until you wake them up again to bake with.

Anyone with a sourdough starter can take part and join the network. It investigates how to use existing platforms of knowledge to create new social relationships. The project is under constant development as new forms of information and contacts are established.

"I am not sure if it has any monetary value, since I just fill jars with plants I find in my garden or in the mountains and leave them to ferment. I use this sourdough starter in the bread that I sell, and this might sound strange, but I consider it as an employee or co-worker. I feed the dough with the starter, let it breathe, and then it works on its own to help ferment the bread. Therefore, I think the starter deserves some kind of ‘salary’, but since a monetary exchange

is difficult I sometimes pay it by feeding it with luxurious honey."

「適当に庭や山の物をビンに水と入れて、放っておくのみなので金銭的な価値があるのか疑問です。ただ、おかしな考えなのかもしれませんが、お客様にこの酵母を使って焼いたパンを提供していますし、かけ継ぎにエサをあげたり、蓋を開けて酸素を入れてあげたり、パンを発酵してもらったり私の中では同じ生物として彼らは『従業員・同僚』的な存在です。ですから、従業員ということは『給料』が発生しても良いなと思えるくらいの価値があると思います。といっても、彼らと金銭の取引はできませんので、かけ継ぎの際にたまに『ちょっと高級なはちみつ』をあげてみたりしています」
